- Once the pressure cooker starts whistling, count 40 minutes.
- After this time, remove from heat and let it cool naturally until the pressure releases.
- Peel and serve the pinhão while still hot.

Recipe 2: Pinhão “Paçoca” (Savory Pinhão Dish)
Ingredients:
- 500 g of boiled and ground pinhão
- 1 smoked sausage
- 5 cloves of garlic, mashed
- 1 large onion, chopped
- 200 g of ground beef
- 200 g of ground pork
- 200 g of fresh sausage (linguiça toscana)
- 200 g of bacon
- Fresh parsley to taste
- Oil, salt, and black pepper to taste
Preparation:
- In a large pan, heat the oil and sauté the bacon, onion and garlic until golden.
- Add the pork and continue sautéing.
- Add the smoked calabresa sausage, the skinless Tuscan sausage and the beef. Sauté well.
